My Mum used to always make her cakes and sometimes made me one, when I lived alone, but when my son was small I used to get the mixture from the Weigh and Save shops, we don't have them here anymore. They did a wonderful rum flavoured one and I made a cake out of the mixture most years and also an anniversary cake for Mum and Dad when Dad was dying of cancer. (Their anniversary is a few days after Christmas) He did manage to enjoy a slice, it was a nice textured cake and always came out well. |

I usually make mine in Sept,as it is better to let it mature, but I haven't this year, and we are away next week,so it will have to be October. |
