Have seen the advert on TV withJamie Oliver he is cooking red cabbage and chopped onions with oil sort of frying it ...how long do you think it should be cooked for and should it be crunchy and served hot as a veg ?

Yes it is eaten hot and not usually served crunchy.

Here is a Delia version.

It needs to cook for longer than you think.

This is important to realise.

http://homecooking.about.com/od/howtocookvegetables/a/cabbagevariety.htm

When cooking with red or purple cabbage, be aware that the compound (anthocyanin) that gives the cabbage that beautiful color will also turn it blue when it is cooked along with any alkaline substance.

Since tap water is often full of alkaline minerals such as lime, be sure to add about 1 teaspoon of acidic agent, such as lemon juice, vinegar, or wine, to the pot when using tap water. If your red cabbage begins to take on that blue tinge in any recipe, the addition of the acidic agent will usually bring back the original color.

Hayley Hot!

It's lovely but it takes ages to cook. Waitrose sell it frozen in little ice cubes, they're uck!

You can't beat M & S, about 4 mins in the microwave.
