This is a great cake to do if you are a Diabetic or just on a Diet.
as no sugar or butter....


8oz Self Raisng Flour
8oz Carrots (Grated)
10floz Tea (apple and Cinnamon Herbal if you can get it)
1 tsp Cinnamon
8oz Sultanas
2oz Apple (Grated)
1 Cooking Apple (Sliced)
2 Eggs Med

Soak sultanas carrots and grated apple in tea over night, add the flour and eggs mix well, lighty grease a 2lb loaf tin or a 7in round tin.
Put half the mixture in the tin and then place your sliced apple on top.Put the remaining mixture on top. And bake for one and a half hours Gas 5 or 180 degrees.

Enjoy with a lovely cuppa.

Yes Easter Bunny I have and my Mum is diabetic and she has made it and loves it, it is one of those cakes you can make and everyone will eat and not realise it is good for you. it is very moist and very moreish.

It is good to naughty now and again.. lol this is sweet enough from the fruit so it will still give you that buzz you get from some of those naughty puds.

My Mum said that my Dad liked it and he warmed it up and had it with Custard...

Great Mau let me know what you think.

I also have a recipe using weetabix which is like malt loaf. And if you don't like weetabix (as I don't) it's ok because it doesn't taste like weetabix at all.

Recipe for Apple Teabread - just a note for diabetics it still has carbs which turn into 'sugar' in the flour, sultanas and apples - so a normal slice still has to take the place of something else which you were going to eat - although released more slowly. Jx

Thanks for the recipe.I have my 15 year old grandson coming to stay a week on thursday.He has been diabetic since he was 4 so i am going to make him some ready for his holiday with me. Annie

Sounds like a nice recipe Cara. but like Janice says there's natural sugar in it but MUCH better than added sugar. If I try it I will use wholemeal flour (recommended for diabetics). I've a couple of recipes and will look them up and try to remember to put them here - Brack and also muffins. I'm Type 2 diabetic - diet and exercise so always interested in suitable 'cake' things. Ron
