How do you cook fresh cod fillett?

I'm not a big fish fan but I don't mind this recipe. Put in a shallow pyrex dish, sprinkle with salt and drizzle with olive oil. Spoon on some salsa and top with parmesan. Bake in the oven until done. Rose

Len, sorry but I don't get the bread in the oven part of your recipe for fish. Could you clarify for this dumbo please? My son when small loved fish (still does) and as we had a wet fish shop nearby, I often bought him a piece of cod and just popped it under the grill for him and served it with carrots, sweetcorn and peas, as he wasn't keen on potatoes. This was from the age of about 3 and he had this a couple of times a week, from choice, for several years. I like salmon fillets wrapped in foil with a dot of butter, or cream cheese with garlic, they cook very quickly and are scrummy. Don't ask for temp etc - I think I usually do them on about gas 5 till they look done, depends on thickness of fillets.

Hi I've just noticed the other new postings after my last reply! Thanks everyone for responding! I usually just go to the local chippie for fish and chips, but decided it would be healthier if I bought fresh fish! Very nice it was too! Jan

I usually skin the fillet, dip it in egg (complete egg whisked) then roll it in bread crumbs, better if you put a couple of pieces of bread in the oven, 1 wholemeal, 1 white, place on a tray and bake in the oven, serve with new potatoes, peas or green beans, a squeeze of lemon juice or slice of lemon. Hi Jan, I don,t. I just go down to the local Chippie and get it from there,They buy straight from the Beach in the morning,and you can,t get fresher than that. Hal. ( I live on the Coast )

Hi Jan, usually we cook cod one of two ways, 1. dip in milk with salt & pepper, put in shallow greased glass pan and cover with crushed up (salt & vinegar chips) 2. also use shallow glass pan, sprayed with cooking oil. place fish in pan. Mix can of cream of mushroom soup with about 1/2 can of milk. or other cream soup (ie: cream celery, cream broccoli). Place in middle of oven at 350 and bake for about 20 minutes. You can't beat good old fried fish. Put 3 small bowls out put plain flour with salt and pepper in 1st one - 2nd a little milk - 3rd breadcrumbs dip fish in flour then milk then b/crumbs then shallow fry oh add some chips mmmm! Norah

This is going to sound horrible, but believe me it is lovely!! Put fish on a shallow pyrex dish such as a lasagne dish Cover fish with thinly sliced button mushrooms and tomatoes Finely chop or grate some onion and put that on top Dot the whole lot with butter Bake approx half an hour at gas 4 or 5 (sorry, don't know the electric equivalent) Serve with new potatoes and veggies Magic Dianne xx

I usually wrap mine onfoil, with a knob of butter and seasoning, then bake in the oven on a low heat. Alternatively, it cooks nicely in the microwave. June xx

Best way is to put flour, salt and pepper in a plastic bag .............. put fish in the bag and shake it until well covered ............ then shallow fry on both sides until golden - ish.......... very tasty............. :-))))))))))))))))))))))))))

I do no more than put it on a plate, with a glass lid over it, and cook it for 2 minutes in the microwave - if it still needs more, I give it 1 more minute. I do the same with all fish - it keeps it moist, retains the flavour, and is quick. You can add anything to it later....
