That is so brave of you, Kitty! And considering the great success of your famous Rock Buns, I am sure it will be a wonderful cake. Now, don't forget to blanch the almonds and de-seed the raisins and ummm...lots of Brandy I believe

You will simply have to start again, Kitty :-D The last time I ate Christmas cake I found a (dead) wasp in it so make sure no flies or wasps are hovering....*shudders at the memory :-(

I soaked the fruit in brandy all night............my long-suffering husband watched me weighing it and has gone to working with a worried frown on his already fretful face, bless him.

II can't find a single stone in my raisins......having googled to see which of the shrivelled up things were raisins and which were sultanas :-S

Now I am regrouping and triple checking before I add the other things............all weighed and measured out with husbands patientish help last night :-0

I bought one of the packs at Waitrose - all the ingredients already weighed out, fruit soaked in brandy etc. all you had to add was the eggs, butter and orange zest - made it two weeks ago - looks and smells great - have "fed" it with some Amaretto

As many of my family do not like rich fruit cakes or icing, I make Mary Berry's Victorian Christmas Cake.

I have to make at least 2 as my husband smells one cooking and will not be satisfied until I relent & let him have a slice. :-D

This year I have had a request from my daughter to make her one as well, so I have had to triple the ingredient shopping list.

As well as mince pies, I make spiced apple ones.

Kitty just remember to cover it half way through the cooking time, so that the top does not get burnt before the middle is cooked.

Oh dear oh dear oh dear :-( :-(


I greased the tin, put in the paper, added the mixture, picked up the tin and the bottom fell out!!!!!!!

Luckily onto a clean worktop, so I fixed the bottom in properly by tightening the clippy thing on the outside of it, put new paper and mix in the tin and it is now in the oven for 4-5 hours *sighs heavily*

Carol.....I used a Mary Berry recipe too :-)

Chaotic.........I laughed as well, once the mixture was firmly contained and in the oven.

I have checked to make sure there is no leakage and so far so good *crosses everything*

I always used to make mine, but now we usually spend Christmas with one of our sons, so I haven't made one for some time.

Tips handed down by my grandmother, to stop the outside of the cake burning, is to stand the tin on several layers of newspaper and also to put thick brown paper round the outside of the tin. I used corrugated cardboard, (the same piece every year), which worked a treat.

And before you ask, the oven temperature is so low that the newspaper doesn't catch fire!! ;-) ;-)
