am just preparing this for tea

and it suddenly occured to me

why do we coat the liver in seasoned flour? i do it cos it was the way my mum and my granmother did

i also coat stewing steak in the same way before putting it in the hotpot

but why?

is it something to do with thicking the gravy pre gravy granules?

lol

Yes I think it is Bev, not that I am an expert or anything. lol

Funny how things are passed down the line. My very good friend flours very lightly her turkey at Christmas I asked why and she said because Mum did it and when the same question was put to her Mum she said because my mother did the same.

just asked hubby (ex chef) and he said to help seal the meat and give brown coating on outside and also helps thicken the gravy

That's right Dawn.
My mummy used to do it and taught us, it does thicken the gravy.
I do love a bit of liver.
People don't eat it much these days do they?
We have it perhaps once a week... lambs liver..... nice.

Bev, All liver is nice, but they often need to be cooked in a different way.
Lambs liver is just such a *nice* tasting liver, where the others are often quite bitter.
AND... Helen, you don't like Broad Beans?
We love all beans in our house, in fact we love most vegetables.
