Re the name Smith-Steinmetz:

Gerard's name at birth is transcribed simply as Smith .
Maybe Steinmetz features as a middle name:

No record of the name Steinmetz - unless the MMN is a corrupted version of it on the baptism above

RC baptism, which fits with the brother having attended Stonyhurst, which is an RC establishment

The parents married in Bruges, as per Gerards' birth cert above.

Presumably Margaret came to Scotland after marriage, or just before.

You would have to buy the Gerard-Smith/Paul marriage cert to be 100% sure if it's the correct one or not - but given the unusual name, yes, it seems almost certain that's her.
The woman who married Anthony Paul was born 1919 - per the 1957 travel record posted earlier.
It does appear, however, that the marriage didn't last, as she was using her maiden name in the 1960s ERs, and Anthony isn't listed with her.

(The marriage cert would give the bride's father's name.).

In the 1925 travel record posted earlier, he was aged 4.

Ancestry suggests (and note, it's only a suggestion), that this is him:

This man died in 1992 - but without knowing if Winson's Ronald died in the UK or not, there's no way to know if this is the right death:
