He may have been a Sheppard.

I can't find a suitable William Guyatt before 1871, not even in 1861.

I'd searched under Sheppard as well as Guyatt but he appears to be very well hidden in the census records.

However, the 1841 census was taken on the 7 June so it's more likely Ann is one of the first two baptisms or possibly the third. If she was Benjamin's daughter I think she would be recorded as that. So you've got choices.
