Left-over moussaka from Saturday night tonight, Jeanette, but I'm sorely tempted to get on the train and come up for some of that haddock! Sounds wonderful, and I've not had fish for a while. Hope you enjoy it! CB >|< X

Have made it up as I go along........ Quickly cooked red and yellow peppers, mushrooms, spring onions, sweetcorn a couple of red chillies in wok........... Packet of large flour tortillas........... Layer veg mixture and cheese and tortillas......looks bit like a cake!!...LOL In oven on baking tray til cheese is all melty and tortilla crispy........slice up like a cake and top with sour cream, salsa and guacamole Hope this makes sense!!!!........I suppose you could put chicken in it but me and t'other half are veggies!!!!!! That sounds lovely Sarah. I might have to give it a go. I'll end up doing several different ones though when they start going 'I don't like mine too hot', 'I don't like that cheese', 'I don't like mushrooms in mine' etc! LOL. I always end up doing several variations on a theme...........I'm sure they think it's a flamin' cafe! LOL
