The recipe sounds gorgeous! I wonder if it could be made as small cakes, such as a fairly large muffin size, as we only eat cakes occaisionally and freeze the rest!

did your OH's uncle have a strange mark on his back?

A bundt pan.......OH calls it my big donut cake tin lol

Mine is a springform tin, I can make a round cake, or put the other insert into it and make a round cake with a hole in the middle, the cake is then turned upside-down and it has a rounded top.

I prefer the bundt pan for the hummingbird cake because it's so moist, sometimes it doesn't quite cook in the middle.

NO idea why it's called a hummingbird cake.

Nolls asked for this one....

There are lots of versions of this cake, this is mine.

Hummingbird cake

Measurements are Australian Standard ~
If you have a cup with metric markings, an Oz cup is 250ml
Aussie teaspoon 5ml
Aussie Tablespoon (not used in this recipe) is 20ml ~
UK, NZ, Canada & US Tablespoon is 15ml.

All measurements (cup & spoon) are level.

1+1/2 cups plain flour
1/2 teaspoon cinnamon
1/2 teaspoon bicarbonate soda
1 cup sugar
3 eggs, lightly beaten
3/4 cup chopped pecans
3/4 cup melted butter (about 180gr)
2 cups mashed ripe banana
1/2 cup crushed pineapple NOT drained of juice
Extra pecans to decorate

Sift flour, cinnamon & soda. Add sugar. Stir in remaining ingredients until just combined.

I use a 25cm bundt pan

180C/350F approximately 1 hour.

Frosting ~ 500gr soft cream cheese, 20gr butter, 1 teaspoon vanilla, 1 cup icing sugar. Beat cheese, butter & vanilla, gradually add icing sugar. Spread over cooled cake & decorate with extra pecans.
