Easy Summer Pudding

I used to make and freeze a few each year - always making sure there was a large one for Christmas.

As you all know OH is in charge now and we are in a glut with fruit, making summer pudding was such a faff cutting bread and lining basin, he has missed it so. However searching channels the other week for something to watch heard the magic words 'summer pudding' and stopped. An Englishman was demonstrating and this morning we have made them together!

Simmer your fruit and sugar for about 10 minutes - if gooseberries, rhubarb etc., put in pot first and cook for 2-3 minutes then add soft fruits. We left to cool overnight.

Brioche sliced bread is the answer - cling film the inside of bowl/container leaving plenty to cover later on. place bread in bowl, then using slatted spoon, a layer of fruit on top of bread and continue ending with bread on top. Cover top completely with cling fim, cover with saucer/plate and a heavy tins/flat iron on top.

Leave for a few hours, then freeze - or EAT!!!!

So quick to do. I was in charge of bread OH in charge of fruit - was good ffelt as though I was cooking again!!!

Chris, that sounds great! I don't have a glut of fruit, but have a bag of supermarket summer fruits in the freezer. Maybe that would work?

No problem - the gooseberries and raspberries came out of freezer - the fresh was strawberries.

Have made jam from frozen fruit before - this year will freeze some surplus strawberries - haven't tried them before.

Chris I made this with summer berries on Saturday for our annual family picnic! Even though I say it my self it was yummy. I saved the juice in a bottle and poured it over before serving with fresh cream. :-D

Now although I have made a lot of them in the past, I was never all that very fond of it.

However - today that has changed - very much so - the brioche bread has made it very yummy!!!!!

ooh will make that Chris thanks for the recipe. I've made loads in the past too but think brioche will be great, a light rich bread, mmm lovely......and nice for you to 'keep your hand in ' so to speak :-)

I've had lots of fruit to use this week and baked gooseberry pies this morning.
Paula like your idea of saving juices and pouring over pudding at the picnic :-D

I have made that recipe before but not with the Brioche and never frozen it ...what a good idea for Christmas too would make a nice change . How nice it was that you and your husband could do it together ...extra special :-D

The juice is nice oveer icecream and have frozen it in small pots.
