Drip Pudding

I think this is a fairly local thing and it served the same purpose s a Yorkshire pudding.Eaten with gravy before the meal so you didn't have room for much of the expensive stuff.

It was a boiled suet bolster (sometimes known as a boiled baby I believe) that was sliced and fried in the bottom of the meat tin where all the tasty bits were after beef had been roasted.

I used to love it and was wondering about trying to replicate it in vege form. Making the pudding is no trouble with vegetarian suet in the steamer but I was wondering what to put in the pan to fry it. I thought about a bit of Marmite and some soy sauce maybe.

Gotta have some now I have remembered it!

Sounds interesting Sharron.
I was born and raised in the next county along and have never heard of this..
I should think Marmite and soy sauce should give a good flavour, - a bit salty though.

If you steamed it plain and just relied on the frying for flavour, you could have a later plain portion with jam ( or whatever) for a pudding.

Sussex Drip Pudding
Make a dough from 8 oz flour, 4 oz suet and some salt, wrap in muslin or similar cloth, and boil for an hour in water. Cut into thick slices and place in a tray underneath the roasting meat to catch the juices and fat. Turn once.

I have sussed out how to do the rasher roly in a veggie format but the bit I need help with is the meat juice flavour bit without recourse to meat

There is another light and healthy Sussex pudding. That is the Sussex Pond pudding,which I think I have mentioned on here before.

That involves lining a basin with suet crust and filling it with a lemon that has been pierced with a fork several times, a lump of butter and some Demarara sugar. You boil the pudding and turn it on to a plate upside down, Then,when you cut it everybody gets a bit of the lemon.

Try Bovril ... it works & is not too salty as long as you do not use too much.

Actually I do have a couple of very precious jars of veggie Bovril from the time of one of those bovine disease outbreaks. This could be what I bought it for.

Try Virgin Olive oil and some veggie mite..yummy...
