Although we both like rice, I have never made risotto. Wednesday night we watched the Hairy Bikers, and they cook a Risotto dish with Broad Beans and Asparagus in with Sliced Green Beans on the top. We both said it looked delicious, but could not eat a platefull of it, without some meat on it.
How do you eat Risotto, if at all

I put onions and 2 or 3 different types of beans and garden peas in it.
Thick slices of young courgette go on the top with a lid on for just long enough to heat them up - I can't stand soggy courgettes.
I good splash of soy sauce once it's served up and yummy yum :-D

It has to be brown rice. :-D

I love Risotto.
This one is so easy and I add some cooked chipolata sausages cut into bits .

Fry some chopped bacon with fat removed without oil for 5-10 mins until crisp.
Remove from pan,set aside.
Heat 1tblsp olive oil in the pan and add 1 peeled and finely chopped onion.Fry for 5 mins until soft.Add 200g Arborio rice ans 3 roughly chopped tomatoes.Stir continuously for 2-3 mins.

Make up 700 ml veg stock and pour 500ml over the rice mixture.Add cooked bacon(and my sausages).Stir through.Then transfer to a 2 litre baking dish and bake in pre heated oven.150deg ,130(fan)gas 2 for 20 mins.Remove from oven and stir.Increase heat to 170deg,150(fan),3 and a half gas.Add some frozen peas and rest of the stock.Return to oveb for another 20 mins.Stir through some parsley and top with some Parmesan shavings.
This amount I think is to feed about 3 people.
It is really tasty and so easy as it's done in the oven.

Yuk, reminds me of "Tapioco Pudding",horrible stuff,I like rice but not sloppy . :-S

Merlin that is exactly what puts me off risotto. As a result have never cooked it.

I prefer rice pudding done in the oven or for other types use my Rice Cooker,nice fluffy rice. oh and that reminder of Frogspawn! a very apt description of it YUK. :-S :-S :-S

Never heard of risotto baked in the oven, but I love risotto cooked on the hob, I use my wok to do it.

I had salmon and vodka risotto in Malta, wish I had asked for the recipe as it was tasty altho of course I couldn't taste the vodka lol

Liz,that recipe I put up is great in the oven.Best thing is you don't have to stand and keep stirring .Lovely and creamy too.I did a nice smoked Haddock Risotto too.Just trying to think if I did that in the slow cooker :-S :-S
