easy as possible please for Carrot cake.?

Never cooked it before...don't like it much myself... but I'm making it for a friends birthday (it's her favourite) Many thanksxx

Hi Muffy I have made this recipe from 'Good Food' and it's really moist xx

Wholemeal Carrot Cake

2 slightly rounded teaspoons baking powder
1 level teaspoon cinnamon
6oz wholemeal flour
4 oz grated carrot
4 oz margarine
4 oz soft dark brown sugar (moscovado is excellent)
grated zest of 1/2 orange
2 large eggs
about 1 tablespoon milk (often a bit more than that)

1. Sift baking powder sale and cinnamon into the flour and mix well
2. mix in grated carrot
3. Cream margarine and sugar until light and fluffy. Add orange zest
4. Add eggs one at a time, beating well, and spoon in a little of the flour mixture to prevent curdling (It WILL curdle,but don't worry about that, it all turns out in the end)
5. Gradually mix in the flour. Add milk a little at a time until the mixture is a soft dropping consistency, but not runny.
6. grease a 15cm/6 inch round cake tin and line base with greased, greaseproof paper. Tip in the mixture.
7. Bake in a moderate oven, Gas 3, 325F, 160C for 3/4 to one hour.

For a yummy topping, take a small tub of philadephia or supermarked own brand equivalent, add one teaspoon of icing sugar and about 1/2 teaspoon of very finely grated orange zest, mix well and spread on top of the cake.

Another tip, chopped walnuts can be added to the mixture, or sultanas, to give it more texture.

I will say, in my last job, I was asked again and again to make mine, so it really does work.

I have a couple but this one is a sneaky one.

Carrot and Pineapple Cake

1 x 370g pkt Lemon Velvet Cake Mix
1 egg
1¼ cups water
1 cup grated carrots
3 tablespoons well-drained, canned, crushed pineapple
Lemon icing

Beat together cake mix, egg and water until smooth. Ad the grated carrots and the pineapple, beat well for 3-4 minutes.

Turn into a greased, floured 18cm (7 inch) deep-sided tin and bake in a moderate oven 45-50 minutes, or until done. Remove from tin, leave until cold and then top with the icing.

Lemon icing. Sift 1 cup icing sugar, add 1 teaspoon soft butter, 2 teaspoons lemon juice, 3 tablespoons thickened cream, mix together until thick and creamy

Cut one carrot in half. Take previously made or bought chocolate cake with thick icing and decorated with chocolate buttons. Insert each half of carrot into cake.

Eat, discarding the carrot as appropriate and giving it to pet rabbit.

Simples.

I had a look at Mau's recipe. Looks very interesting and has been well received. The comments on the site are worth a read as well.

I'll have a rifle through my cupboards and cook whichever one I have the ingredients to hand for on my first effort....

OH and my Dad are going to taste test it for me as I really don't like carrot cake at all so I'll let you all know how it goes.

I made Mau's one today...and by the time OH, Mum, Dad and youngest have finished with it ....there's hardly anything left !! I had a small slither and have to say it tasted really good !!! Going to do that one for my friend for her birthday.

OH isn't really keen on the fruit in it though...and nor is my eldest...so once the victoria sponge I also baked today is finished ( I was on a roll lol) I'm going to have a go at TW's recipe...as her Banana loaf recipe is to die for !

Will try the others too in the fullness of time...don't like to just stick to one recipe...xx
