Microwave cooking!!

Does anyone have any microwave recipes suitable for holiday cooking. I don't like to spend too much time in the kitchen when on holiday so use a microwave quite a bit. I have a few recipes but wondered if anyone had any favourites.

Me too at home BC, Oh and heat up baked beans. Although I have cooked mince in mine before I got the slow cooker, made bolognese so I can do that and chile on holiday good old stand bys, but when they were new there were all sorts of recipes, I have found some on line but just wondered if anyone had any ideas. Probably wont need them in May as we probably wont be flying!!

This recipe is for kids but I've made it several times for OH and myself.
It serves four so I usually half the recipe.
Sweet and Sour chicken
9 tbsp tomato ketchup
3tbsp malt vinegar
4 tbsp dark muscavado sugar
2 garlic cloves crushed
4 boneless chicken breasts cut into chunks.
1 small onion peeled and roughly chopped
2 red peppers, seeded and cut into chunks
227g can pineapple pieces in juice drained
100g sugar snap peas, roughly sliced
Handful of salted roasted cashew nuts(optional)

1. In a large microwave dish, mix the ketchup,vinegar, sugar and garlic thoroughly with the chicken,onion and peppers. Microwave uncovered on High for 8-10 mins until the chicken is starting to cook and the sauce is sizzling.
2. Stir in the pineapple pieces and sugar snap peas and return to the microwave for another 3-5 mins until the chiken is completely cooked.
3. Leave to stand for a few minutes then stir in the cashews (if using) and serve.
I don't usually add the nuts.
I like this recipe as you only need one dish and it's fairly quick as well as being tasty.

BC no not cancelled yet, we still have just under two weeks but the way things are going it does look a bit dodgy.

They keep saying BC that it could go on for months and the second volcano could errupt. I don't think any of us will know until the date we are actually airborne.

On the 5.00 p.m. news today - ''Manchester airport opening at 9.00 a.m. tomorrow''- so hopefully the southern airports will soon follow suit. I'm sure we will see you here in May.

It could be that the 'plume' has cleared the north, but at least it will help with getting some people home.

I do lots of microwave cooking.....Go to Waitrose or M&S, get lots of micro meals...then zap in micro.
From this you can deduce that I cant cook....lol

As an alternative to the baked potatoes, try doing new potatoes, the smaller the better -very quick and just add a bit of butter or one of the flavoured olive oils once they're cooked

For a filling lunch,try this OH loves it and is so quick.

It's more or less a Welsh rarebit,but instead of having a messy saucepan to wash it's done in a pyrex,or microwaveable dish.
Melt cubes of cheese with chopped onion and milk...or you could put say tomato,but we like it with just onion.This takes about 2 mins,and then add an egg to the mixture and stir in,put back in microwave for another minute,and while you have your toast in the toaster,it's done.If it's for 2 people possibly use 2 eggs.The dish is much easier to wash than a saucepan.

About the only thing I cook in my microwave (I reheat many many casseroles!) is peanut brittle.

One thing I won't claim is that it's easy to clean up. ;) But it's fabulous peanut brittle! (Hint: men love it especially, if you happen to need a tool for this purpose.)

Of course, to give you the recipe, I'll have to convert those 8-oz cups of mine to your 10-oz cups ............................
