My very nicest sweet pastry.

Use a good quality plain flour eg 8oz
To that quantity of flour use 5oz fat (half white Flora or similar and half margarine like a sunflower marg...or butter if feeling really reckless)
Rub till like breadcrumbs.
Stir in a tablespoon of caster sugar and one egg yolk.

Mix with enough cold water to make a dough (don't over do the water).

Roll out on floured board carefully as it is more fragile than usual pastry.

When I use this for mince pies I stick the tops on with orange juice.
For apple pies etc I glaze the top with a little milk and sometimes sprinkle on a little sugar after cooking and while hot.

Cold hands. Marble surface. Treat it gently. Sift the flour.

My dad's pastry was incredible - how I miss that man's cooking!
