help with Irish ancestor...

I have been trying to track down details on my Irish GGG grandfather Richard Hatter b/c 1803 in Dublin, married to Theresa unknown b/c1801 also in Dublin. I have lots of details of them once they arrived in the UK they start appearing on the 1851 census and have details of their children, but can't find anything prior to 1851 and once they disapear into Ireland nothing at all.

Can anyone tell me where I need to look????

I can't find anything on them in the 1841 census, but on the 1851 their oldest son Richard who is 24 states that he was born in what looks like Staffordshire?? But on the 1861 census it says all his siblings were born in Dublin, so it's really unlikely that he was born over here?? I'm getting very confused.

Can anyone shed any light on any of this for me?? Thanks.
