Your best bet is to fill in the dowloadable application form and send it with a cheque for £6.00

Odds are her Will was proved in Winchester..............

We were told a Will went to Probate.
We live in Notts/Derbys would the local Office be able to do a search.

Do you know for certain that any Will she left was actually sent to Probate?

You would need to visit your nearest probate office for them to do a search as it is too recent for online. Current probates on ancestry only go up to and include 1966. I believe the currant cost £6.
