This looks to be a difft family from the 1891 posted, but I think it's still the same guy:

In 1881, note he's a couple of h/h's away from Henry B Smith, hotel keeper.

Since we (so far) haven't found an earlier record than the 1891 Canadian census that Gins found, it's difficult to know where Ann was born

Edit - image of 1891 says John is married, and that the children's parents were both born in 'Ireland' ie John and the missing spouse
