HELP WITH IRISH ANCESTORS

My husband is terminally ill and I am trying to find the answer to the mystery of his Irish grandmother for him before it is too late.
His mother was a twin (Ethel and Samual John Moffett) dob. 26/02/20. Unfortunately they are both now deceased. They were born to an Edith Moffett, a domestic servant, in Lisnaneen. Her year of birth is c.1899. They were always led to believe she died in childbirth but I can't find any proof of this. On the birth certificate the birth was registered by A.M. Elliott M.D. in attendance, Cookstown.
They were brought up by someone unknown to us, who was paid for this. How can I find out where they lived, went to school etc. We have no photos at all of her childhood, but know she lived in Ireland until the war when she joined the forces in the UK.

She did correspond with a Charlotte Kane of ?Artane, Dublin5, but we don't know if this was a friend/relative. I think that she is probably also deceased by now.

Is there a 1921or any census that may help?

Any help/thoughts on where I could go next would be gratefully received.
