I see Emily Ricketts and Emily Gay are both registered Jul-Sep 1868 St. Saviour Vol. 1d Page 8

I'm guessing this means the parents weren't married so registered her under both names.

Yes on the 1st three children she put it down as Gay, on the 8th child she put maiden name as Ricketts so we have now req'd the certificate for the 7th child

This 1861 census may be unconnected, but it DID say on Emily's marriage certificate that her father was Robert, a bricklayer:
