Well R - I have never quite mastered that poaching method I am afraid, BUT the steam-fried one I CAN do and it works out the same. |

I find poached very easy just boil water in saucepan, put in a splash of vinegar, crack egg into cup then create vortex in boiling water drop in egg repeat for how many eggs you want. Remove and put on paper towel .... voila ready for putting on top of potato scones. |

You could 'steam-fry' them R - somewhat easier than poaching but the same result !! |

I do a modified "Ulster" about once every couple of months. Fried bacon with potato scones fried in the bacon fat. to make it a little healthy i usually put poached rather than fried eggs on the potato scones. |
