Hi Ellen
My first step would be contacting the cemetery to see if the funeral applications have any further clues to offer.
I think better than the death cert would be Edwin's birth - you can use a transcription service like Joy Murrin, where you only pay for the fields of information you need. This can be quiet affordable and give great results.
I agree that the Mary is not the Jordans, and it seems none of the families in the census can be yours since the family was in NSW earlier than you thought.
Still intrigued by the reg date for Edwin...!

Hey Cherilyn
thanks for all your help. I would love to find some immigration records but have searched to no avail. At first I searched through the Ancestry.com facilities and identfied Henry senior and Mary Jordan as his parents and within a couple of generations was rip snorting and tally-hoing through all the major nobility and royalty of the UK - the Mountjoys and Arundles and all the rest. I thought there must be a mistake. I do not think Mary A Toy was Mary Toy nee Jordan but am not able to find the correct Mary Ann Toy.
I am not sure where to go from here. i suppose I will have to buy Mary Ann Toy's death certificate to identify her parents however I seem to be forking out a fair bit for these lately so would refer other means.
Cheers Ellen

This is interesting - this birth comes up in a search at NSW bdm site for 1869, but the reg date comes up 2005!
181570/2005 TOY EDWIN [father] HENRY [mother] MARY
He is buried at Rookwood Anglican G465. In the same plot is Mary A TOY, buried 27/4/1883! I assume you are in NSW, if so you can phone the cemetery to see if they have additional info - 02 9746 2177.
Henry TOY is also buried at same cemetery, Anglican 7/1078, with Flora (buried 13/4/1948).

FYI, from NLA Trove newspaper site (why does it only mention the bride's father!)
The Sydney Morning Herald, Saturday 14 January 1888 TOY--PENBERTHY.-December 21, at St. James, Sydney, by the Rev. Latimer Jackson, M.A., Henry Toy, of Sydney, to Flora Eveline Penberthy, only daughter of John Penberthy, of Glebe Point-road, Glebe.
Just found his funeral notices (Sat 16th Feb 1924, p.15), and apart from Flora and the children (Evelyn, Elsie & Linda), there is a notice from Henry's brother Edwin TOY!
His death: 13426/1941 TOY EDWIN [father] HENRY [mother] MARY MARRICKVILLE
The Sydney Morning Herald, Tuesday 22 April 1941 TOY. —April 18, 1941, at Home of Peace, Edwin Toy, Cowper Street, Glebe. Interred Rookwood Cemetery, April 19.
Henry & Flora also lived in Cowper St, Glebe.

Wow - thanks for all your replies - I did make a silly typo in my original email which I should have picked up - Henry married Flora in Aust in 1887 - not 1997 as per my original post.
I did originally look at Henry Toy and Mary Jordan as the parents of Henry - the Toys of Rosemerryn House however all that lot are linked in big time to UK royalty and I thought I must have got it wrong.
So do you think Henry and Mary would be the best bet for my Henry's parents- I will have to dust off my tiara in that case.
cheers Ellen
