The Fuller family of Ventry, Ireland

I am trying to find the name of my GGGrandmother who was married to William Fuller (1780-1853). According to a family Bible of which extracts are owned by my cousin, she died in 1856 and was buried in Ventry Church. William was buried in a Tomb at Ventry.
I visited Ireland in 2006 and went to church records office in Dublin and also Ventry but the church records of Ventry are very sparse, the tombstones are mostly illegible and the church itself was locked.
According to family legend she may have been Spanish or Italian.
Some of their children went to America.
Any information about this family would be helpful.
